About Kimchi


What is kimchi?

Kimchi is a traditional Korean dish whose components can vary but usually include some combination of vegetables, garlic, ginger, chili peppers, salt, and fish sauce. The mix is pickled and fermented, which was originally a way to preserve the vegetables for the winter months. Cabbage is the most common vegetable used to make kimchi although carrots, radish, cucumber, and scallions are also frequently used, too. Also it's very easy to make it a Vegan dish by keeping all the ingredients plant-based.


How long does kimchi last in the fridge?

Once Kimchi is fermented, it still continues to age in the fridge. But after full fermentation, Kimchi starts to lose its crunchiness due to constant contact with oxygen. And with the presence of oxygen, it can make an environment where bad bacteria can live as well.

Kimchi is well known for a long shelf life and in Korea, people intentionally store Kimchi for a long period of time to bring deep depth of flavour. They do this by burying the Kimchi in a traditional Kimchi pots under the ground. But in domestic fridge, it is best to consume within 7 days of opening the jar.


Is kimchi pickled or fermented?


There is a BIG difference between pickled and fermented. Pickled vegetables are made by adding vinegar to produce the tanginess whereas fermented vegetables make its own taste of tanginess. The sourness is made by a by-product that is made naturally during fermentation process, to preserve beneficial bacteria.


Is kimchi pasteurised?


NO. Our Kimchi is never pasteurised and is meant to be naturally fermented.

We deliver to every postcode in the UK, except parts in Highlands, Islands, Guernsey and Jersey and Northern Ireland.

What do I do if I never received my order?

 

Please inform us via email: info@koreantaste.co.uk (Mon-Friday 9am – 5pm) with your order reference number. We will track the order with our courier services and get back to you as soon as possible.


Can I track my order?

 

You can track your parcel by our courier service tracking system. By providing your email and phone number at the check-out, our courier service will send you a notification email/text so you know when your parcel will be arriving.
